Chicken Pot Pie Bake

A comforting Chicken Pot Pie Bake with a flaky crust filled with creamy chicken and mixed vegetables, perfect for family gatherings.

  • About 2 cups of cooked chicken, shredded
  • 1 to 2 cups of mixed vegetables (carrots, peas, corn)
  • 1 cup of cream (heavy cream or half-and-half) blended with broth
  • 12 cans of store-bought biscuit dough or homemade dough

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. Cook your chicken if not already cooked.
  3. Sauté the veggies in a large skillet over medium heat with olive oil or butter for 5-7 minutes.
  4. Prepare the cream sauce by adding the chicken, cream, and broth to the skillet and stir until thickened.
  5. Combine everything together by mixing in the sautéed veggies with the sauce.
  6. Assemble the bake by transferring the filling into a greased baking dish and placing the biscuit dough on top.
  7. Bake for about 25-30 minutes until the biscuits are golden brown.
  8. Cool for 5-10 minutes before serving.

Notes

Serve with a crisp green salad or cornbread. Leftover filling can be used in pastries or quesadillas.
