Chickpea Feta Avocado Salad

A deliciously nutritious salad bursting with flavor and packed with healthy ingredients, perfect for warm afternoons or as a refreshing side dish.

  • 1 avocado, pitted and diced
  • 4 ounces feta cheese, crumbled
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients and ensure chickpeas are drained and rinsed. Chop and dice vegetables beautifully.
  2. Dice the Avocado: Carefully cut the avocado in half, remove the pit, scoop out the flesh, and dice it. Squeeze lemon juice over it to prevent browning.
  3. Slice the Red Onion: Thinly slice the red onion. Soak in cold water for 10 minutes if a milder flavor is preferred.
  4. Chop the Fresh Herbs: Roughly chop parsley and mint.
  5. Combine in a Large Bowl: In a large bowl, add chickpeas, avocado, onion, parsley, and mint. Gently fold together.
  6. Prepare the Dressing: Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a small bowl.
  7. Toss the Salad with the Dressing: Pour dressing over the salad and toss gently.
  8. Add Feta Cheese: Sprinkle crumbled feta on top and toss gently.
  9. Chill and Serve (Optional): Let salad chill in the refrigerator for 30 minutes for flavors to meld.

Notes

This salad can be made a day ahead, but add avocado and dressing just before serving for freshness.
