Chocolate Covered Strawberry Brownies

Delicious fudgy brownies topped with fresh strawberries and drizzled with smooth chocolate, perfect for any occasion.

  • 1 (18 oz) box brownie mix
  • 2 cups chopped strawberries
  • 1 ½ cups semi-sweet chocolate chips
  • 1 tbsp vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Prepare the brownie mix according to box instructions, adding water, eggs, and optionally an extra egg yolk for density.
  3. Pour the brownie batter into the prepared dish and spread evenly. Bake for 25-30 minutes.
  4. While the brownies bake, rinse and chop the strawberries.
  5. Melt the chocolate chips and vegetable oil together in a microwave-safe bowl, stirring until smooth.
  6. Once the brownies are cooled, top with chopped strawberries and drizzle with melted chocolate.
  7. Chill in the refrigerator for 30 minutes before slicing.

Notes

For added flavor, try using melted coconut oil instead of vegetable oil. You can substitute strawberries with other berries or fruits as desired.
