  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon ground cumin
  • Lettuce leaves, for serving (optional)

Instructions

  1. Prep Your Ingredients: Start by gathering all your ingredients. Give your cherry tomatoes a good rinse, and chop them in half. Dice the cucumber and finely chop the red onion and parsley.
  2. Open your can of chickpeas and pour them into a strainer. Rinse them under cold water for a minute.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, pepper, and ground cumin.
  4. Combine the cottage cheese, chickpeas, cherry tomatoes, diced cucumber, red onion, and parsley in a large mixing bowl.
  5. Drizzle the dressing over your salad mixture. Gently fold the dressing into the salad.
  6. Grab a spoon and taste your salad. Adjust seasoning if needed.
  7. If you have time, cover your salad and let it chill in the fridge for about 15-30 minutes.
  8. When you’re ready to serve, grab some lettuce leaves and lay them on your serving plate. Spoon the cottage cheese and chickpea mixture onto the bed of greens.
