  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the apples by coring and slicing into wedges, toss with olive oil, salt, and cinnamon, then roast for 20-25 minutes.
  3. Sauté the chopped onions in olive oil until soft and translucent, about 5-7 minutes.
  4. Add the minced garlic and sauté for an additional minute.
  5. Combine the roasted apples and pumpkin puree with the sautéed mixture, then stir in the spices.
  6. Pour in the vegetable broth and bring to a gentle simmer.
  7. Blend the soup until smooth using an immersion blender.
  8. Finish with heavy cream and grated Parmesan cheese, adjusting the seasoning with salt and pepper.
  9. Serve hot, garnished with fresh herbs.

Notes

For a lighter option, substitute heavy cream with coconut milk or cashew cream. You can also add cayenne pepper for a spicy kick.
