Cozy Loaded Baked Potato Salad

A warm and creamy salad that captures the comforting flavors of a classic loaded baked potato, perfect for potlucks and gatherings.

  • 4 large baked potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub and poke holes in potatoes, bake for 45-60 minutes until tender.
  2. While the potatoes are baking, chop bacon and green onions, and cook bacon until crispy.
  3. Once the potatoes are done, cool them for 10 minutes, then slice in half and scoop out most of the flesh into a bowl.
  4. Add chopped bacon, cheese, sour cream, mayonnaise, and green onions to the potato flesh. Season with salt and pepper.
  5. Mix everything together until combined but still textured. Adjust seasoning to taste.
  6. Chill for 30 minutes if desired, then serve warm, room temperature, or cold.

Notes

Serve with extra cheese, green onions, or ranch dressing for garnish. Store leftovers up to 3 days in the fridge.
