Cream Cheese Corn Casserole

A creamy, comforting casserole that combines sweet corn and cream cheese, perfect for family gatherings and potlucks.

  • 2 cups (300 g) whole kernel corn, drained
  • 1 cup (240 g) cream-style corn
  • 4 oz (115 g) cream cheese, softened and cubed
  • ¼ cup (60 g) unsalted butter, melted
  • ½ cup (120 ml) whole milk
  • 1 large egg
  • ½ cup (65 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (50 g) shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish with butter or non-stick spray.
  3. Stir together the whole kernel corn and cream-style corn in a large mixing bowl until combined.
  4. Add the cubed cream cheese and cheddar cheese (if using) to the corn mixture.
  5. Melt the unsalted butter and pour it into the corn mixture, stirring to combine.
  6. Add the whole milk and egg, whisking until smooth.
  7. Mix together the flour, granulated sugar, baking powder, salt, and black pepper in a separate bowl, then add to the wet ingredients.
  8. Pour the mixture into the prepared baking dish and spread evenly.
  9. Bake for 40-45 minutes until golden brown and set.
  10. Let it cool for about 10 minutes before serving.

Notes

For a lighter version, switch cream cheese for Greek yogurt. Can be made ahead and stored in the fridge for up to 24 hours before baking.
