Creamy Corn Chowder

A comforting, creamy corn chowder that feels like a warm hug in a bowl, featuring fresh corn, smoky bacon, and aromatic herbs.

  • 4 cups fresh corn kernels (or frozen)
  • 2 large Yukon Gold or Russet potatoes, diced
  • 4 strips bacon, chopped
  • 1 cup heavy cream (or half-and-half/coconut milk)
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon thyme (or bay leaf)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Shuck corn, peel and dice potatoes, chop onion and garlic.
  2. Cook the bacon: In a pot, cook bacon over medium heat until crispy (6-8 mins). Remove with a slotted spoon.
  3. Sauté the aromatics: Add onion to pot and sauté for 5-7 mins until translucent. Add garlic last minute.
  4. Add the potatoes and broth: Toss in potatoes, pour in broth, bring to a gentle boil, then simmer for 15 mins.
  5. Stir in corn: Add corn and mash some potatoes against the pot to thicken chowder.
  6. Add the cream: Pour cream in, mix well, and season with salt, pepper, and herbs. Simmer for another 5-10 mins.
  7. Adjust and serve: Taste and adjust seasoning; thin with broth if too thick.
  8. Garnish and enjoy: Serve hot with crispy bacon bits and parsley.

Notes

This chowder tastes even better the next day. Store in an airtight container in the fridge.
