Lemon Chicken Pasta

A creamy and zesty pasta dish featuring tender chicken and a luscious lemon-cream sauce, perfect for cozy weeknight dinners or entertaining guests.

  • 8 oz pasta (such as fettuccine or spaghetti)
  • 1 lb chicken breast, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and add your pasta. Cook according to the package instructions until al dente. Once cooked, reserve about a cup of pasta water, then drain the rest and set aside.
  2. Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add your sliced chicken and season with salt and pepper. Cook for about 6-8 minutes until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  4. Zest your lemon into the skillet followed by the juice. Stir for around a minute.
  5. Pour in the heavy cream and mix well. Allow it to come to a gentle simmer.
  6. Add the grated Parmesan cheese and whisk until smooth. If too thick, adjust with reserved pasta water.
  7. Toss in the cooked pasta and sautéed chicken, coating everything well in the lemon-cream sauce.
  8. Serve by plating the Lemon Chicken Pasta topped with chopped parsley and additional Parmesan if desired.

Notes

Feel free to add veggies like spinach or cherry tomatoes, or substitute chicken with shrimp or plant-based protein for variations.
