  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples (about 23 medium apples)
  • 1 cup caramel sauce
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl until well mixed.
  3. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
  4. Bake the crust in the preheated oven for about 10 minutes or until lightly golden.
  5. Let the crust cool while you prepare the filling.
  6. Beat the softened cream cheese until smooth, then gradually add the sugar and mix until well blended.
  7. Add the eggs, one at a time, mixing on low speed after each addition. Then, add the vanilla extract and mix until smooth.
  8. Fold in the diced apples and cinnamon until evenly distributed.
  9. Pour the cheesecake filling over your cooled crust, spreading it smoothly with a spatula.
  10. Bake for 40-45 minutes, or until the center is set but slightly jiggles when shaken gently.
  11. Remove the cheesecake bars from the oven and cool in the pan for about an hour, then chill in the refrigerator for at least 4 hours.
  12. Drizzle with caramel sauce before serving.

Notes

These bars can be served as is or garnished with powdered sugar or whipped cream. They pair well with vanilla ice cream or spiced cider.
