French Onion Chicken Orzo Casserole

  • 2 large yellow onions (thinly sliced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 garlic cloves (minced)
  • 1 1/2 cups orzo pasta
  • 2 cups cooked shredded chicken (rotisserie works well)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream (or half and half for lighter option)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the onions: In a large oven-safe skillet, heat the butter and olive oil over medium heat. Add the onions, sugar, and salt, and sauté for about 15-20 minutes until golden-brown.
  3. Add the garlic and sauté for another minute until fragrant.
  4. Incorporate the orzo and shredded chicken, folding everything gently together.
  5. Add the thyme, black pepper, chicken broth, and heavy cream, stirring until combined.
  6. Layer on the mozzarella and Parmesan, mixing until melted.
  7. Bake uncovered for about 25-30 minutes until golden and bubbly.
  8. Cool for 5-10 minutes before serving.

Notes

Casserole can be prepared ahead of time and refrigerated. Ideal for batch cooking and freezing.
