Chicken & Wild Rice Soup

A warm and comforting Chicken & Wild Rice Soup, perfect for chilly days and filled with nostalgic flavors.

Ingredients

  • 1 lb Chicken (boneless, skinless)
  • 1 cup Wild Rice
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, diced
  • 2 Garlic cloves, minced
  • 6 cups Chicken Broth
  • 1 cup Heavy Cream
  • Olive Oil
  • Salt and Pepper to taste
  • Fresh Parsley or Dill for garnish

Instructions

  1. Prepare the Chicken: Season with salt and pepper, then sear in olive oil over medium heat until golden brown, about 5 minutes per side.
  2. Sauté the Aromatics: Remove chicken and add onion, garlic, celery, and carrots; sauté for 5–7 minutes until soft.
  3. Add the Wild Rice: Stir in wild rice to coat with flavors.
  4. Pour in the Broth: Add chicken broth, bring to a boil, then simmer for 35-40 minutes until rice is cooked.
  5. Shred the Chicken: While simmering, chop the reserved chicken and add back to the soup once rice is tender.
  6. Finalize the Creaminess: Stir in heavy cream and heat for an additional 5 minutes.
  7. Serve it Up: Ladle into bowls and garnish with fresh herbs.

Notes

This soup can be frozen; omit cream if you plan to freeze. Add herbs for additional flavor.
