Creamy Papaya and Mango Chia Pots

A refreshing tropical dessert made with ripe papaya, mango, and creamy chia seeds, perfect for a guilt-free indulgence.

  • 1 ripe papaya, diced
  • 1 ripe mango, diced
  • 1/2 cup chia seeds
  • 2 cups coconut milk (or any milk of choice)
  • 2 tablespoons honey or maple syrup (optional)
  • Juice of 1 lime
  • Lime wedges for garnish

Instructions

  1. Prepare the Chia Mixture: In a medium bowl, combine your chia seeds and coconut milk. Give it a quick stir and let it sit for about 5-10 minutes to hydrate.
  2. Make the Fruit Puree: Dice the papaya and mango into small chunks and mash half of the mango and papaya with a fork to create a puree.
  3. Sweeten the Chia Mixture: After the chia seeds have settled, add in the lime juice and sweetener if using. Stir until well combined.
  4. Layer the Ingredients: In clear jars, start by layering a spoonful of the chia mixture, followed by the fruit. Repeat layers until you reach the top, finishing with a fruit layer.
  5. Chill and Serve: Cover jars and chill for at least 2 hours or overnight. Garnish with lime wedges before serving.

Notes

These chia pots can be stored in the fridge for up to 5 days. Feel free to replace fruits based on seasonal availability.
