Crispy Garlic Zucchini Balls

Delightfully crispy zucchini balls packed with flavor, perfect for snacks or appetizers.

Ingredients

  • 2 medium zucchinis, grated and moisture squeezed out
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Cooking spray (for air frying or baking)

Instructions

  1. Preheat your oven or air fryer to 400°F (200°C).
  2. Grate the zucchinis and squeeze out moisture.
  3. Combine breadcrumbs, grated Parmesan, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes in a bowl.
  4. Add squeezed zucchini and beaten egg, and mix gently.
  5. Shape the mixture into small balls about 1.5 inches in diameter.
  6. Prepare your air fryer with cooking spray or line a baking sheet with parchment paper.
  7. Cook in the air fryer for 12-15 minutes or in the oven for 20-25 minutes until golden brown.
  8. Let cool for a couple of minutes before serving.

Notes

Serve with marinara sauce or a yogurt dip. Can be made vegan by using a flaxseed egg.
