Loaded Mashed Potato Bites

A deliciously cozy treat made from creamy mashed potatoes, crispy bacon, and gooey cheese, perfect for snacks or appetizers.

  • 2 cups mashed potatoes (cooled)
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon (crumbled)
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs (plain or seasoned)
  • Oil (for frying)

Instructions

  1. Prepare your cooled mashed potatoes and place them in a mixing bowl.
  2. Mix in the cheddar cheese, crumbled bacon, chives, garlic powder, black pepper, and salt. Add the egg and combine until well mixed.
  3. Form about a tablespoon of the mixture into a ball and place on a parchment-lined tray.
  4. Set up a breading station with flour in one dish and breadcrumbs in another.
  5. Bread each potato ball by coating in flour, then dipping in the breadcrumbs.
  6. Heat oil in a large skillet over medium heat until shimmering.
  7. Fry the bites for 3-4 minutes on each side until golden brown.
  8. Drain on a paper towel-lined plate to absorb excess oil before serving.

Notes

These bites can be baked at 400°F (200°C) for about 20-25 minutes if you prefer a healthier option.
