Crispy Parmesan Crusted Potatoes

Crispy on the outside and tender on the inside, these Parmesan crusted potatoes are the ultimate comforting side dish.

Ingredients

  • 2 pounds small potatoes (such as baby Yukon Gold or red potatoes)
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut your potatoes in half or leave them whole if they’re small.
  3. Toss your potato halves with olive oil, garlic powder, onion powder, Italian herbs, black pepper, and salt until well coated.
  4. Add the grated Parmesan cheese and toss again until the potatoes are thoroughly coated.
  5. Arrange the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Roast them in the oven for 30-35 minutes or until golden and crispy.
  7. Garnish with fresh parsley and serve hot.

Notes

These potatoes are great served with roasted chicken, steak, or grilled veggies. They can also be enjoyed as a snack on their own.
