Cheesy Parmesan Yellow Squash Fritters

Delicious fritters made with grated yellow squash and Parmesan cheese, perfect for a comforting snack or appetizer.

  • 2 cups yellow squash, grated
  • 1 cup grated Parmesan cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Rinse the yellow squash and dry it off. Grate the squash and squeeze out excess moisture using a kitchen towel.
  2. Combine the grated squash, Parmesan, almond flour, green onions, garlic powder, salt, and pepper in a mixing bowl. Add the eggs and mix well.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly to ensure even cooking.
  5. Fry the fritters for 3 to 5 minutes on each side until golden brown and crispy.
  6. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
  7. Serve hot, optionally with sour cream or a zesty dipping sauce.

Notes

Ensure to squeeze out as much moisture from the squash as possible for crispy fritters. You can prepare the mixture in advance and store it in the fridge.
