Easy Sheet Pan Scored Potatoes

A delightful and visually appealing side dish of scored baby potatoes, rich in flavor and perfect for any meal.

  • 2 lbs baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or rosemary (optional)
  • Salt and pepper, to taste
  • Chopped fresh parsley (for garnish)
  • Optional: Grated Parmesan cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prep the potatoes by rinsing them thoroughly and patting them dry. Score each potato with shallow cuts across the top.
  3. Season the scored potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until well-coated.
  4. Arrange the seasoned potatoes on a lined baking sheet, cut side up, ensuring they’re spaced out.
  5. Bake for about 30-35 minutes until golden brown and fork-tender.
  6. Add Parmesan during the last 5-10 minutes of baking if using.
  7. Garnish with fresh parsley and serve warm.
