  • 8 small corn tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha or hot sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat the skillet: Start by grabbing a large skillet and heating it over medium-high heat. Add a drizzle of oil.
  2. Cook the ground beef: Once the skillet is hot, add the beef, season with salt and pepper, and cook until browned, about 5-7 minutes.
  3. Prepare the taco sauce: In a small bowl, combine sour cream, mayonnaise, sriracha, and lime juice. Mix until creamy.
  4. Assemble the tortillas: Once the beef is cooked, place a generous amount of meat in a tortilla and top with cheese.
  5. Smash the tacos: Fold the tortilla in half, press down slightly with a spatula, and get that golden crust.
  6. Fry until crispy: Cook for about 3-4 minutes on one side, flip, and fry the other side for another 3-4 minutes.
  7. Remove and drain: Transfer tacos to a plate lined with paper towels to drain excess oil.
