  • 3 Tomatoes, chopped
  • 1/2 Red Onion, thinly sliced
  • 1/4 Cup Fresh Herbs (such as parsley or basil), chopped
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • Salt and Pepper to taste

Instructions

  1. Prep your veggies by washing cucumbers and tomatoes under cool, running water. Dice cucumbers and chop tomatoes into bite-sized pieces.
  2. Slice the red onion thinly, soaking in cold water if desired to mellow the flavor.
  3. Chop the fresh herbs roughly to add brightness and aroma.
  4. Combine the diced cucumbers, chopped tomatoes, sliced red onion, and fresh herbs in a large mixing bowl.
  5. Whisk together olive oil and red wine vinegar in a small bowl, adding salt and pepper to taste.
  6. Dress the salad with the whisked dressing and toss gently.
  7. Let it rest for about 10-15 minutes to allow the flavors to mingle.
