Fearless 3-Day Oatmeal Chocolate Chip Breakfast Muffins

Delightful and wholesome breakfast muffins made with oats and chocolate chips that can be prepared in advance for an easy breakfast throughout the week.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it with oil.
  3. Mix the dry ingredients in a large mixing bowl.
  4. Combine the wet ingredients in another bowl and whisk until creamy.
  5. Combine the wet mixture into the dry ingredients gently.
  6. Fold in the chocolate chips.
  7. Fill the muffin tins about ¾ full with the batter.
  8. Bake for 18-22 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5-10 minutes, then transfer to a wire rack.

Notes

These muffins can be frozen for up to 3 months. For variations, consider adding nuts, spices, or fruits.
