Apple Carrot Bread

A delightful loaf that marries the sweetness of apples with the warmth of carrots, perfect for breakfast or as a cozy dessert.

  • 1 cup grated carrots
  • 1 cup grated apples
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or cooking spray.
  3. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  4. Combine the vegetable oil, granulated sugar, brown sugar, and eggs in a large bowl until smooth. Add in the vanilla extract and blend.
  5. Stir in the grated carrots and apples until well-coated.
  6. Add the dry mixture to the wet ingredients, folding it in gently.
  7. Transfer the batter into your prepared loaf pan, smoothing the top.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool the loaf in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a nutty addition, fold in 1/2 cup of chopped walnuts or pecans. Store leftovers in an airtight container for up to three days.
