Easy Fruit Pizza

A refreshing dessert featuring a buttery cookie crust topped with cream cheese frosting and colorful fresh fruits.

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Assorted fresh fruit (strawberries, kiwi, blueberries, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cookie dough by creaming together the brown sugar and softened butter until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Combine the dry ingredients in another bowl and whisk together the flour, baking soda, and salt.
  5. Combine the wet and dry ingredients, stirring gently until just mixed.
  6. Prepare a baking sheet with parchment paper and spread the dough into a circle about ½ inch thick.
  7. Bake for about 10-12 minutes or until the edges are lightly golden.
  8. Cool the cookie crust in the pan for 5 minutes, then transfer to a cooling rack until completely cool.
  9. Prepare the cream cheese frosting by mixing the cream cheese, powdered sugar, and vanilla extract until creamy.
  10. Spread the frosting over the cooled cookie crust.
  11. Top with the assorted fresh fruits, arranging them decoratively.
  12. Slice into wedges and serve immediately or refrigerate for up to 2 hours.

Notes

For best results, serve chilled. Variations include adding chocolate drizzle or using coconut cream instead of cream cheese.
