  • 4 cloves Minced Garlic
  • 0.5 cup Parmesan Cheese, grated
  • 23 tablespoons Olive Oil
  • Salt, to taste

  • Fresh Herbs (optional, e.g., rosemary, thyme, parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel your sweet potatoes, then cut them into bite-sized cubes.
  3. Toss the sweet potato cubes with olive oil, minced garlic, salt, and pepper in a large mixing bowl.
  4. Sprinkle grated Parmesan cheese over the coated sweet potatoes and toss again to distribute.
  5. Line a baking sheet with parchment paper and spread sweet potato cubes evenly.
  6. Roast in the oven for about 25-30 minutes, stirring halfway through.
  7. Top with fresh herbs and more Parmesan before serving.
