Easy Parmesan Bow Tie Italian Pasta Salad

A colorful and refreshing pasta salad with bowtie pasta, fresh vegetables, and a tangy dressing, perfect for potlucks and weeknight dinners.

  • 8 oz bowtie pasta (or farfalle)
  • 3/4 cup cherry tomatoes, halved
  • 3/4 cup English cucumber, diced
  • 3/4 cup red bell pepper, diced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1/4 cup sliced black olives, drained
  • 1/4 cup sliced Spanish olives (with pimento), drained
  • 1/4 cup diced red onion
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp honey (optional)

Instructions

  1. Cook the pasta: Start by bringing a large pot of water to a boil. Add a sprinkle of salt and cook the bowtie pasta until al dente, about 8-10 minutes.
  2. Prep the veggies: Chop the cherry tomatoes, cucumber, bell pepper, parsley, and red onion into uniform pieces.
  3. Drain the pasta: Once cooked, drain and rinse the pasta under cold water.
  4. Combine pasta and veggies: In a large bowl, mix the cooled pasta with the prepped veggies.
  5. Prepare the dressing: Whisk together olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, pepper, and honey in a small bowl.
  6. Dress the salad: Pour the dressing over the pasta mixture and toss to coat.
  7. Add cheese: Gently fold in the grated Parmesan cheese and adjust seasoning if necessary.
  8. Chill: Let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made ahead of time and stored in the fridge. It tastes even better the next day!
