Easy Strawberry Sheet Cake

A light and airy strawberry sheet cake that evokes nostalgic summer memories with every bite.

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, pureed
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • ½ cup strawberries, chopped (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or line it with parchment paper.
  3. Whisk together the flour and baking powder in a medium bowl.
  4. Cream together the softened butter and sugar until pale and fluffy.
  5. Add the eggs one at a time, mixing gently after each addition, then stir in the milk and vanilla.
  6. Gradually blend in the dry ingredients, mixing until just combined.
  7. Fold in the pureed strawberries.
  8. Pour the batter into the prepared pan and bake for 25-30 minutes.
  9. Remove from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Beat the cream cheese until smooth, then gradually add the powdered sugar and chopped strawberries.
  11. Spread the cream cheese frosting evenly over the cooled cake.

Notes

Serve with a sprig of mint or extra chopped strawberries. Pairs well with whipped cream or vanilla ice cream.
