Pumpkin Brownies

Rich, fudgy brownies infused with the warm flavors of pumpkin and spices, perfect for autumn.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or line it with parchment paper.
  3. Melt the unsalted butter in a medium saucepan over low heat.
  4. Mix the melted butter and granulated sugar in a large mixing bowl, whisking until smooth.
  5. Add the eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
  6. Incorporate the all-purpose flour, cocoa powder, salt, and baking powder in another bowl.
  7. Fold the dry mixture into the wet ingredients until just combined.
  8. Add in the pumpkin puree and pumpkin spice, folding gently to combine.
  9. Pour the batter into the prepared pan and spread it evenly.
  10. Bake for 30-35 minutes until the edges look set.
  11. Cool in the pan for about 15 minutes then transfer to a wire rack to cool completely before cutting.

Notes

Serve warm with whipped cream or ice cream. Adding nuts or chocolate chips can enhance the flavor.
