Sausage Pumpkin Pasta

A comforting fall-inspired dish featuring creamy pumpkin and savory sausage mixed with penne pasta.

  • 1 pound Italian sausage (casings removed)
  • 1 cup pumpkin puree
  • 8 ounces penne pasta
  • ½ cup freshly grated Parmesan cheese
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • ½ teaspoon nutmeg
  • Salt to taste
  • Freshly ground black pepper
  • Pasta water (reserved)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add 8 ounces of penne pasta and cook according to package instructions until al dente. Reserve about a cup of pasta water, then drain and set aside.
  2. Sauté the aromatics: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add one diced onion and cook until translucent, about 5 minutes.
  3. Add the garlic: Toss in 3 minced garlic cloves and sauté for an additional minute.
  4. Brown the sausage: Push the sautéed aromatics to one side of the skillet and add your sausage. Break it up and cook until browned, about 7-10 minutes.
  5. Incorporate the pumpkin: Stir in 1 cup of pumpkin puree and 1 cup of chicken broth. Let it simmer for 5-10 minutes.
  6. Season it up: Add in ½ teaspoon of nutmeg, salt to taste, and freshly ground black pepper.
  7. Combine pasta and sauce: Toss in your drained penne, mixing until well-coated with the sauce. Add some reserved pasta water if needed.
  8. Finishing touches: Stir in ½ cup of freshly grated Parmesan cheese until melted.

Notes

Serve topped with extra Parmesan cheese and fresh parsley or basil. Pairs well with breadsticks or a side salad.
