Homemade Strawberry Pop Tarts

Delightful homemade strawberry pop tarts with a crispy exterior and sweet filling, perfect for breakfast or a snack.

  • 2 cups sliced strawberries
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • ⅔ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon coarse salt
  • 1 teaspoon granulated sugar
  • 1 cup unsalted butter, cold and diced
  • 45 tablespoons cold water
  • 1 cup strawberry preserves
  • Double pie crust
  • 1 large egg, lightly beaten
  • 1 cup powdered sugar
  • 12 tablespoons heavy cream or milk
  • Rainbow sprinkles (optional)

Instructions

  1. Prepare the filling: In a bowl, combine the sliced strawberries, lemon juice, lemon zest, and granulated sugar and let it sit for 10-15 minutes.
  2. Make the dough: Whisk together flour, salt, and sugar. Add cold butter and mix until crumbly.
  3. Add cold water gradually, mixing until a slightly sticky dough forms. Refrigerate for 30 minutes.
  4. Roll out the dough to 1/8-inch thickness and cut into rectangles.
  5. Assemble the pop tarts: Place filling on half of the rectangles, cover with remaining rectangles, and seal the edges.
  6. Preheat your oven to 375°F (190°C) and brush the tops with beaten egg.
  7. Bake for 20-25 minutes until golden brown, then cool on a wire rack.
  8. Make the glaze by whisking powdered sugar and heavy cream until smooth.
  9. Glaze and serve your pop tarts with optional sprinkles.
