Flourless Peanut Butter Banana Muffins

Delicious and easy-to-make flourless muffins packed with the flavors of peanut butter and ripe bananas.

  • 2 ripe bananas, peeled
  • 2 large eggs
  • 1 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 2 tablespoons honey
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your muffin tin with liners or grease it.
  2. Mash the ripe bananas in a mixing bowl until smooth, leaving some chunks if desired.
  3. Combine the eggs, peanut butter, maple syrup, honey, and vanilla with the mashed bananas; mix until well combined.
  4. Add the baking soda and stir until just combined; avoid overmixing.
  5. Fold in the mini chocolate chips evenly throughout the batter.
  6. Scoop the batter into the muffin tin, filling each cup about three-quarters full.
  7. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with peanut butter or honey for extra sweetness. Freeze individually for later enjoyment.
