  • 1/4 cup dark rum
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss the peeled and sliced apples with the dark rum in a medium bowl and let them marinate for 15 minutes.
  3. Whisk together the flour, baking powder, and salt in another bowl.
  4. Combine the melted butter and sugar in a large mixing bowl until smooth.
  5. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  7. Fold in the marinated apples evenly throughout the batter.
  8. Pour the batter into a greased 9-inch round cake pan and smooth the top.
  9. Bake for 40-45 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
