Fresh Salmon with Mango Salsa

  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Prepare the Mango Salsa: In a mixing bowl, combine the diced mango, chopped red onion, minced jalapeño, chopped cilantro, and lime juice. Toss to combine and set aside.
  2. Season the Salmon: Pat the salmon fillets dry and season both sides with salt and pepper. Drizzle with olive oil.
  3. Heat the Pan: Heat a skillet over medium-high heat and add olive oil.
  4. Cook the Salmon: Place the salmon fillets skin-side down and cook undisturbed for 4-5 minutes.
  5. Flip and Finish Cooking: Carefully flip the salmon and cook for another 3-4 minutes until opaque.
  6. Plate It Up: Let the salmon rest for a minute and top with mango salsa.

Notes

Let the salsa sit in the refrigerator for about 30 minutes to enhance flavor. For variations, try grilling the salmon or adding avocado to the salsa.
