Garlic Parmesan Crockpot Chicken and Potatoes

A comforting and flavorful crockpot dish featuring tender chicken and baby potatoes infused with garlic and parmesan.

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients by washing and halving the baby potatoes.
  2. Sear the chicken (optional) in a skillet over medium-high heat for 3-4 minutes on each side until golden.
  3. Layer the halved potatoes in the bottom of the crockpot.
  4. Add garlic and seasonings mixed together over the chicken breasts.
  5. Pour the chicken broth over everything in the crockpot.
  6. Add parmesan cheese and olive oil on top of the chicken.
  7. Set the crockpot to cook on low for 6-7 hours or high for 3-4 hours.
  8. The final touch is to garnish with fresh parsley and stir the potatoes and juices before serving.
