  • 4 boneless, skinless chicken thighs
  • 2 lemons (juiced)
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Pita bread
  • 1 cup plain Greek yogurt
  • 1 cucumber (grated and drained)
  • 1 tablespoon dill (chopped)
  • 1 clove garlic (minced) for tzatziki
  • Salt to taste for tzatziki
  • Sliced tomatoes
  • Sliced red onion

Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together lemon juice, olive oil, oregano, minced garlic, salt, and pepper.
  2. Marinate the Chicken: Add chicken thighs to the marinade, cover, and refrigerate for at least 30 minutes.
  3. Prepare the Tzatziki: In a bowl, combine Greek yogurt, grated cucumber, dill, minced garlic, and a pinch of salt. Mix until smooth.
  4. Grill the Chicken: Preheat grill and cook chicken thighs for about 6-7 minutes on each side or until cooked through.
  5. Slice and Assemble: Let the chicken rest, slice it, and stuff it into warm pita with toppings.
  6. Build Your Gyros: Layer the chicken in pita, add veggies, and tzatziki. Serve immediately.

Notes

For added flavor, let the marinade rest for 10 minutes before using. Serve with extra tzatziki on the side.
