The Ultimate Greek Salad

A classic Greek salad bursting with fresh flavors, perfect as a side dish or a light meal.

Ingredients

  • 2 cups fresh ripe tomatoes, chopped
  • 1 cucumber, chopped
  • ½ cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies: Wash and chop the tomatoes, cucumber, and prepare the olives.
  2. Create the base: In a salad bowl, mix the tomatoes, cucumbers, and olives.
  3. Crumble the feta over the salad.
  4. Combine the dressing ingredients in a bowl, whisk until mixed.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Garnish with extra feta and oregano before serving.

Notes

For a heartier meal, add grilled chicken or shrimp. This salad also pairs well with pita bread.
