Grilled Nectarine Burrata Prosciutto Salad

  • 8 ounces burrata cheese, torn
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • Finishing salt, fresh ground black pepper
  • Grilled baguette, for serving
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh oregano, roughly minced
  • 1 tablespoon fresh mint, roughly minced
  • 1 tablespoon fresh lemon thyme leaves
  • 1/2 cup extra virgin olive oil
  • Pinch of salt, fresh ground black pepper as desired

Instructions

  1. Prep Your Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates with a paper towel dipped in oil.
  2. Prepare the Nectarines: Slice the nectarines in half, remove the pit, and then quarter them. Toss the quarters in a drizzle of olive oil, a pinch of salt, and some black pepper.
  3. Grill the Nectarines: Place the nectarines on the grill, cut-side down, and grill for about 2-3 minutes or until char marks appear. Flip and grill for an additional 2-3 minutes.
  4. Make the Dressing: In a bowl, combine lemon juice, white wine vinegar, lemon zest, and minced herbs. Slowly whisk in olive oil until emulsified.
  5. Combine the Ingredients: In a large salad bowl, mix the grilled nectarines, cherry tomatoes, heirloom tomatoes, and halved cherries with baby greens. Add torn burrata and drape the prosciutto over the top.
  6. Drizzle with Dressing: Gently toss everything together with dressing, careful not to break apart the burrata too much.
  7. Serve with Grilled Baguette: Slice and grill baguette until golden, and serve alongside the salad.
  8. Final Touches: Finish with a sprinkle of finishing salt and extra black pepper.
