Grilled Zucchini with Goat Cheese

A delightful summer side featuring grilled zucchini topped with creamy goat cheese, honey, and fresh basil.

  • 4 medium zucchini
  • 4 oz goat cheese
  • 1/4 cup fresh basil, chopped
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare the zucchinis by washing and slicing them lengthwise into about 1/2-inch thick planks.
  3. Season the zucchini planks with olive oil, salt, and pepper, ensuring they are well-coated.
  4. Grill the zucchini slices for about 4-5 minutes on each side until grill marks appear and they are tender.
  5. Prepare the goat cheese topping by crumbling the cheese into a bowl and mixing with chopped basil and honey.
  6. Combine the grilled zucchini on a serving platter and spoon the goat cheese mixture over the top.
  7. Final touch: garnish with fresh basil leaves and additional honey, then serve immediately.

Notes

Best served fresh but can be grilled ahead of time and warmed before serving. Adjust sweetness to taste.
