  • 2 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 tbsp erythritol (or preferred keto sweetener)
  • ½ cup almond flour
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ cup crushed pork rinds (optional, for extra crunch)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cream cheese, ground cinnamon, vanilla extract, and erythritol in a mixing bowl until creamy.
  3. Whisk together the almond flour, shredded mozzarella, Parmesan cheese, beaten eggs, and melted butter in a separate bowl.
  4. Spread a generous layer of the cream cheese mixture on each tortilla.
  5. Roll each tortilla tightly around the filling.
  6. Dip each rolled tortilla in the egg and cheese mixture.
  7. Line a baking sheet with parchment paper and place the roll-ups seam side down.
  8. Bake for 15-20 minutes, or until golden brown and crispy.
  9. Cool for a few minutes before serving.
