Healthy Buckeyes

A healthier twist on traditional buckeyes, these snacks combine creamy peanut butter and dark chocolate for a delicious treat.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup maple syrup
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Mix the creamy peanut butter, maple syrup, and vanilla extract in a large mixing bowl until smooth.
  2. Sift in the powdered sugar gradually, one cup at a time, and stir until fully combined.
  3. Chill the mixture for about 30 minutes, then roll into balls the size of a tablespoon.
  4. Melt the dark chocolate chips with coconut oil until smooth.
  5. Dip each ball halfway into the melted chocolate, letting the excess drip off.
  6. Chill the dipped buckeyes again until the chocolate hardens.

Notes

For a nut-free option, substitute peanut butter with sunflower seed butter. Keep the buckeyes refrigerated for the best texture.
