Creamy Pumpkin Soup

A warm and inviting creamy pumpkin soup, perfect for autumn evenings and comforting gatherings.

  • 2 cans (15 oz each) pumpkin puree
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 onion, finely chopped
  • 1 tablespoon olive oil (or butter)
  • Salt and pepper to taste
  • Optional seasonings: nutmeg, cinnamon, cayenne pepper

Instructions

  1. Saute the onions: In a large pot over medium heat, add olive oil (or butter) and sauté the chopped onions until translucent, about 5 minutes.
  2. Add the pumpkin puree: Stir in the pumpkin puree and cook for 3-4 minutes.
  3. Pour in the broth: Add 4 cups of broth and optional seasonings; stir to combine.
  4. Simmer away: Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Blend it smooth: Use an immersion blender or transfer in batches to blend until creamy.
  6. Add the cream: Stir in 1 cup of cream, heat through without boiling.
  7. Taste and adjust: Season to taste with salt and pepper.

Notes

This soup can be easily frozen. For variations, try adding herbs, veggies, or spices to customize the flavor.
