Healthy Peach Oatmeal Breakfast Cookies

Wholesome cookies made with ripe peaches and rolled oats, perfect for breakfast or a snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup mashed ripe peaches (fresh or canned)
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a baking sheet with parchment paper or a silicone baking mat.
  3. Mash the peaches in a medium bowl until smooth.
  4. Mix the mashed peaches with almond butter, honey, and vanilla extract.
  5. Combine the rolled oats, baking powder, cinnamon, and salt in a separate bowl.
  6. Fold the dry mixture into the wet ingredients with a spatula.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes until edges are lightly golden.
  9. Cool for 5 minutes before transferring to a wire rack.

Notes

These cookies freeze beautifully. Enjoy warm with milk or coffee.
