Healthy Twix Cups

A delectable twist on the classic candy bar that’s sure to satisfy your sweet cravings while nourishing your body.

Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 cup dates, pitted
  • 1/4 cup almond milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. Combine almond flour, melted coconut oil, and maple syrup in a mixing bowl.
  4. Press a tablespoon of the crust mixture into each muffin liner.
  5. Bake for 8-10 minutes, until lightly golden.
  6. Blend the dates, almond milk, and vanilla extract until smooth.
  7. Spoon the caramel filling over the baked crust layers.
  8. Heat the chocolate chips in the microwave until melted.
  9. Drizzle or spoon the melted chocolate over the caramel layer.
  10. Place the muffin tray in the fridge for at least 30 minutes to set.
  11. Carefully peel away the liners and enjoy!

Notes

These cups are best served chilled. For extra fun, whip up a dollop of coconut whipped cream to enhance the experience.
