Indulgent Strawberry Chocolate Shell Cake

A luxurious chocolate cake enveloped in a strawberry chocolate shell, topped with fresh strawberries, perfect for any celebration.

  • 2 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda

  • 1 cup Buttermilk
  • 1/2 cup Vegetable Oil
  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Boiling Water
  • 2 cups Fresh Strawberries
  • 1 tablespoon Lemon Juice
  • 8 ounces Dark Chocolate
  • 2 tablespoons Coconut Oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the dry ingredients in a large bowl: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine the wet ingredients in another bowl: buttermilk, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and gently fold them together until just combined.
  5. Incorporate the boiling water into the batter carefully.
  6. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Prepare the strawberry filling by mixing chopped strawberries with lemon juice and letting them macerate for 15-20 minutes.
  9. Melt the dark chocolate and coconut oil together until smooth.
  10. Assemble the cake by layering the macerated strawberries between the cooled layers and pouring the chocolate shell over the top, letting it cascade down the sides.

Notes

For an elevated touch, serve alongside whipped cream or vanilla ice cream. Feel free to substitute ingredients based on dietary preferences.
