Grilled Flank Steak Pinwheels

Delightful grilled flank steak pinwheels filled with fresh spinach and melty cheese, perfect for summer gatherings.

Ingredients

Scale
  • 1 pound flank steak
  • 2 cups fresh spinach
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional herbs and spices

Instructions

  1. Prepare the Steak: Take the flank steak out of the fridge about 30 minutes before cooking to bring it to room temperature, then trim any excess fat.
  2. Marinate the Steak: Whisk together olive oil, salt, pepper, and any optional seasonings. Rub the marinade evenly on both sides of the steak and let it soak for at least 30 minutes.
  3. Prep the Filling: Wash and chop the spinach, then mix it with the cheese in a bowl to combine.
  4. Roll It Up: Spread the filling over the steak, then roll tightly and secure with twine or toothpicks.
  5. Preheat the Grill: Light the grill and preheat to medium-high heat.
  6. Grill the Pinwheels: Grill for 6-8 minutes per side, using a meat thermometer for desired doneness.
  7. Rest and Slice: Let the pinwheels rest for 5-10 minutes before slicing into 1 to 1½-inch rounds.

Notes

Serve with a vibrant salad or grilled vegetables. Consider pairing with a dipping sauce for added flavor.
