  • 1 cup crushed pineapple (well-drained)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup finely chopped pecans
  • ½ cup finely chopped green bell pepper
  • 2 tablespoons finely chopped green onion
  • 2 tablespoons finely chopped red bell pepper (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt (adjust to taste)
  • 1 cup finely chopped pecans (for coating)

Instructions

  1. Prep Your Cream Cheese: Place the softened cream cheese in a mixing bowl and let it sit at room temperature for about 30 minutes.
  2. Mix in the Goodies: Add crushed pineapple, cheddar cheese, chopped pecans, bell peppers, green onion, garlic powder, onion powder, and salt. Mix until evenly combined.
  3. Shape the Cheese Ball: Form the mixture into a ball.
  4. Chill: Wrap the cheese ball in plastic wrap and refrigerate for at least 2 hours.
  5. Coat with Pecans: Roll the chilled cheese ball in chopped pecans for an even coating.
  6. Final Touch: Transfer to a serving platter and garnish with extra green onion, if desired.
