Summer Berry Jello Lasagna

A refreshing, berry-tastic dessert perfect for summer gatherings, featuring layers of fruity jello and creamy goodness.

  • 1 package (6 oz) of strawberry Jello
  • 2 cups boiling water
  • 1 cup cold water
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 container (8 oz) of whipped topping
  • 1 package (8 oz) of cream cheese, softened
  • 1 cup powdered sugar
  • 1 package (9 oz) of graham crackers

Instructions

  1. Prepare the Jello: In a mixing bowl, combine the strawberry Jello with 2 cups boiling water. Stir until completely dissolved.
  2. Add cold water: Once your Jello mixture isn’t steaming hot, stir in 1 cup of cold water.
  3. Layer the fresh fruit: Sprinkle sliced strawberries, blueberries, and raspberries evenly into a 9×13 inch dish.
  4. Pour the Jello: Carefully pour the Jello mixture over the berries and refrigerate for about 2 hours until set.
  5. Create the creamy layer: In a separate bowl, beat together softened cream cheese and powdered sugar until smooth.
  6. Incorporate the whipped topping: Gently fold in the whipped topping until fully combined and creamy.
  7. Spread the creamy layer: Once the Jello layer is set, spread the creamy mixture evenly over the Jello layer.
  8. Final layer of love: Crush the graham crackers and scatter over the cream layer.
  9. Chill it out: Return the dish to the fridge for at least another hour before serving.
  10. Slice and serve: Cut the Jello lasagna into squares and enjoy!

Notes

Garnish each slice with additional berries and a sprig of mint for a refreshing presentation.
