  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, finely chopped
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a baking sheet lined with parchment paper.
  3. Mix the wet ingredients: cottage cheese, olive oil, and egg in a bowl.
  4. Incorporate the dry ingredients: flour, baking powder, and salt into the wet mixture.
  5. Add in the spinach and cheese and fold gently until combined.
  6. Shape the dough on a floured surface and divide into 6-8 equal pieces.
  7. Form the bagels by rolling each piece into a ball and making a hole in the center.
  8. Bake on the prepared sheet for 20-25 minutes until golden brown.
  9. Cool the bagels on a wire rack before serving.

Notes
