Keto Butternut Squash Casserole

A delightful casserole marrying the earthy sweetness of butternut squash with creamy cheeses, perfect for cozy nights.

  • 2 cups cubed butternut squash
  • 2 cups cubed zucchini or spaghetti squash
  • 1 medium onion, sliced
  • ½ cup chopped pecans
  • ¼ cup pumpkin seeds or pepitas (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon Lakanto or sugar-free maple syrup
  • 1 cup chopped kale
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your butternut squash by peeling and cubing it into bite-sized pieces.
  3. Sauté sliced onions in a skillet with olive oil for about 5-7 minutes until they are soft.
  4. Add the cubed butternut squash and zucchini, seasoning with salt and pepper; cook for 8-10 minutes.
  5. Include the chopped kale and cook for an additional 2-3 minutes before adding chopped pecans and pepitas.
  6. Mix together remaining olive oil, melted butter, Lakanto, and a pinch of salt in a separate bowl.
  7. Assemble the casserole by mixing the sautéed vegetables with the sauce and folding in the cheddar and some Parmesan.
  8. Top with remaining Parmesan and bake for 25-30 minutes until bubbly and golden.
