  • 3 large eggs
  • 1 cup water
  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh key lime juice
  • 1 (8 oz) tub whipped topping
  • Lime zest for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the yellow cake mix, eggs, and water in a large bowl. Stir until just combined.
  3. Pour the batter into a greased 9×13-inch baking pan.
  4. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Poke holes all over the top of the cake using the back of a wooden spoon after cooling for 10-15 minutes.
  6. Whisk together the sweetened condensed milk and fresh key lime juice in a mixing bowl.
  7. Pour the lime mixture over the poked cake, ensuring it gets into all the holes.
  8. Chill the cake for at least 2 hours or overnight.
  9. Spread the whipped topping over the chilled cake just before serving.
  10. Garnish with lime zest before serving.
