Lasagna Soup

A comforting Lasagna Soup that combines all the flavors of traditional lasagna into a cozy, soothing bowl.

Ingredients

  • 1 lb Ground Beef
  • 1 (14.5 oz) can Canned Diced Tomatoes
  • 15 oz Tomato Sauce
  • 8 oz Pasta (Lasagna Noodles or Any Short Pasta)
  • 1 cup Ricotta Cheese
  • 2 cups Shredded Mozzarella
  • 2 tsp Italian Seasoning
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • Salt and Pepper, to taste
  • 4 cups Chicken or Vegetable Broth

Instructions

  1. Sauté the Base: Heat a large pot over medium heat. Add olive oil and onion, cooking until soft. Add garlic and cook for another minute.
  2. Brown the Meat: Add ground beef, seasoning with salt, pepper, and Italian seasoning. Cook until browned, about 5-7 minutes, then drain grease.
  3. Stir in the Tomatoes: Pour in diced tomatoes and tomato sauce. Let it simmer for 5 minutes.
  4. Add the Pasta: Toss in broken lasagna noodles and broth. Bring to a boil, then simmer covered for 15 minutes.
  5. Finish with Ricotta & Mozzarella: Drop dollops of ricotta into the soup, swirl gently, and sprinkle mozzarella. Allow to melt.
  6. Final Seasoning: Adjust seasoning with salt and pepper, adding more broth if desired.
  7. Serve Up: Ladle soup into bowls, garnish with basil and extra mozzarella.

Notes

This recipe can be easily made vegan by substituting ground beef with lentils and ricotta with tofu-cashew cream.
